The power of cacao and why dark raw chocolate is good for you

Cacao, chocolate in its purest form, is known as the ‘Food of the Gods’ and is considered one of nature’s most nutritious foods. Dark chocolate with a high percentage of raw unprocessed cacao has been shown to be a rich source of the heart-protective antioxidant, known as called flavanols.

Not all dark chocolate is created equal

Unfortunately, most methods of processing cacao into cocoa for powder and chocolate bars, exposes the cacao to high temperatures removing many of these antioxidants and depleting the nutrients found in raw cacao. Since flavanols are bitter, they are often removed, even from many dark chocolate brands, during the manufacturing process through alkalization. Nestle, Hershey’s, Godiva, Ghirardelli and Dove often alkalize their dark chocolate.
